SUPPER ME! My biggest challenge is definitely finding time during the week. I like to make big portions when I cook and freeze the leftovers for when I’m working late or just feeling lazy.

I think my hardest thing is sitting down to plan an entire week’s menu. It makes it hard that I’m often out of town all week for work. And you can bet that if I buy a bunch of yummy veggies on Monday morning and then leave, they will still be there when I get back on Friday or Saturday.

My biggest challenge is getting dinner ready before 8pm. I don’t know what happens, I start thinking about it at 5:30-then it is 7:30. Oops!

I absolutely lurve cooking. My biggest mealtime challenge is that I am a solo homeowner. I typically end up with scads of leftovers and a fridge packed with mysterious contents in Tupperware from who knows how long ago. A girl can only host so many dinner parties per week!

My biggest challenge is that I get home from work around 6:30 or 7 and if a meal takes more than 30 minutes to make, I feel like I have no time in between eating and going to bed. And I never make time to actually plan meals, that would be so helpful.

This is actually the main thing the hubs and I fight about, not money, but dinner! We both hate cooking but I enjoy eating a healthy variety and the hubs could eat pizza every day and not care. So it is a constant struggle being motivated to find cheap, easy, quick, healthy meals I can make each night! Oh yeah, I’m also a medical resident and have limited evening time often…
