Every year I resolve to cook more and eat out less. Every year I do okay… for a while. Then, like most resolutions, my willpower kind of wears off.     Supper me! I’m horrible at planning… So when I get home from work with my daughter around 6pm she is starving and I have to scramble to make her something before her complete melt down and by the time my husband gets home she is fed but I’m starving!

    My biggest struggle is variety. I tend to get stuck with a few go-to recipes during week days and need a little boost (aka kick in the behind) to try something new.

    I actually like finding recipes and meal-planning, but I find by Wednesday or Thursday I’m pooped and don’t feel like cooking anymore. Need to find things that can be prepared on the weekend and easily cooked later in the week.

    I always forget to take frozen things out to thaw. Normally it’s chicken which is kinda the star of the meal in most cases.

    I love to cook. Only problem is that i cook when friends come over because I don’t like tons of leftovers for just me. So it costs me a fortune because I have to go out and start from scratch when purchasing in order to complete a meal for two!
