I must say, I do love me some artichokes (in pasta, on pizza, roasted etc.) but brussel sprouts are my top veggie – roasted w/ balsamic vinegar is to die for. I’ve converted many haters with that recipe!

I eat big salads most nights and I don’t know if I could pick a favorite veggie. But put artichokes on my pizza or in a dip and I’m in heaven!

I love raw carrots for that first bite where they taste like they came straight out of the ground. I’m probably weird, lol!

Artichoke me! I’m a Nebraska girl, born and raised, so my favorite veggie is CORN for sure, although I’m also partial to celery (in college I would eat entire bowls of it at lunch, my friends thought I was insane!)
