Hey, it sure looks like fun and so much fuss over a vegetable! I’m not ralely an artichoke fan and I often wonder why it has come to be known as the king of vegetables even though it isn’t ralely that tasty (compared to say Durian as the king of fruits LOL). Do the artichokes in Italy taste any different from those here?

I love brussel sprouts… especially when roasted. A couple of my coworkers think I’m crazy, but I don’t think they’ve ever had them cooked the right way. Also a favorite: adding roasted carrots and parsnips to my sprouts.
That sounds awesome – I love all of those things separately, so together they must be terrific! In our family, mashed carrots and parsnips is a holiday staple.

ARTICHOKE ME! I really, really like corn (is that technically a grain?) and sweet potatoes (technically a starch?), and have recently discovered beets (definitely a vegetable).

Okay, so I know that “technically” it’s a fruit, not a vegetable, but I have loved cucumbers my whole life. I can chop off the ends and sit down and eat an entire cucumber in one sitting.

I’ve taught my husband to love veggies. Our first hit was Brussels Sprouts and lately he’s been taken by storm by “Krispy Kale” — kale leaves crisped up in the oven with garlic and olive oil. To him, it’s better than ice cream.
